The doctors and staff at Checkoff & Casey Orthodontics are looking forward to the warmer and sunnier weather that is on its way! Now that we are heading into springtime, we would like to share a few braces-friendly spring recipes with you here. These recipes are easy to make, delicious, and have been given a stamp of approval by your friendly Warminster orthodontists!

Easy Zucchini Casserole

This zucchini casserole is cheesy and delicious and it only takes about one hour to make from start to finish.

Ingredients:

2 to 4 zucchini or 3 to 4 cups – sliced and quartered
medium onion, chopped
1 cup cottage cheese
3 tablespoons cream
1+ cup of sharp cheddar cheese
3 eggs
¼ teaspoon each of salt and pepper

Directions: Preheat oven to 375 degrees. In a bowl, mix together the cottage cheese, eggs, cream, cheddar cheese, salt, and pepper. Then add the zucchini and onions and mix well. Put the mixture into a medium sized baking dish and bake for 45 minutes or until fully cooked and browned on top. Enjoy! (recipe source: Day2DayJoys)


Berry Good Smoothie

This healthy and yummy smoothie is perfect for breakfast, brunch, or anytime you are craving something sweet. Plus it makes 3 servings so there is plenty to share!

Ingredients:

16 ice cubes
½ cups water
½ cup mixed berry fruit juice
½ cup frozen raspberries
2 ¼ cups frozen mixed berries
¼ cup frozen blueberries

Directions:

Blend the ice cubes in a blender until crushed. Add water & juice. Blend. Then add the frozen berries and blend again, until smooth. Pour into chilled glasses and enjoy! (recipe source: Pinterest)


Soft Raspberry Lemon Cookies

When your friends who are not wearing braces are digging into chewy and gooey sweets, you can enjoy these delicious soft cookies made with raspberries and lemon. (recipe source: BakeEatRepeat)

Ingredients:

½ cup butter, softened
1 cup sugar
1 large egg
½ teaspoon vanilla
zest and juice from ½ lemon
¼ teaspoon baking powder
¼ teaspoon salt
1/8 teaspoon baking soda
1 ½ cups flour
¾ cups frozen raspberries, chopped

Directions:

Preheat oven to 350 degrees. Line two cookie sheets with baking paper or silicone baking mats. Set aside. In large bowl, cream together the butter and sugar until light and fluffy. Add the vanilla, egg, lemon zest, and lemon juice, then mix well. Then add the salt, baking powder, baking soda, and flour and mix well. Add in the raspberries and mix lightly.

Drop the dough by tablespoons onto prepared cookie sheet. Bake for about 15 minutes or until cookies begin to brown on the edges and are no longer shiny. Put the second half of the cookie dough in the refrigerator while the first batch is baking so it softens and the raspberries thaw. Allow the cookies to cool on baking sheet for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
